Chicken Quesadillas

I have decided to add something to each day of the week.  Today, being Monday, has become Menu Mondays.  While I know it's later in the day, hopefully, if you are like me and can never decide what to make for dinner, these posts will help you.


I have decided for the first post, since it is getting close to dinner time, to give you guys a yummy sounding Chicken Quesadilla recipe.  Here are a few reasons why.  Firstly, they're usually healthy. Second, kids usually love them (what's better than chicken and cheese with pretty red and green peppers thrown in?).  I found this recipe at allrecipes.com, but here is the information and picture for you.


Ingredients:
1 pound skinless, boneless chicken breast, diced
1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers
2 red bell peppers
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese




Directions:
1. Preheat the broiler.  Grease a baking sheet.

2. Toss the chicken with the fajita seasoning, then spread onto the baking sheet.  Place under the broiler and cook until chicken pieces are no longer pink in the center, about 5 minutes.

3. Preheat the oven to 350 degrees F (175 degrees C).

4. Heat the oil in a large saucepan over medium heat.  Stir in the green bell peppers, red bell peppers, onion, and chicken.  Cook and stir until the vegetables have softened, about 10 minutes.

5. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack.  Fold the tortillas in half and place onto a baking sheet.

6. Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.

*The site says that this recipe makes 20 servings, but there is an option to be able to change the serving amount before you start cooking, and they have a calculator that will help you do so.  So go ahead and give it a try, and then come back and tell me if they are good to you.  I sense a shopping trip coming up soon for me so I can start trying new recipes again and sharing my own personal experiences with you guys.
